What counts as an active project?

Any project that is not closed. Setup, active, dormant, and closeout projects each hold a slot. Every plan includes a set number of active projects, and going over is a small per-day overage rather than a hard stop.

What happens when my trial ends?

Your organization becomes read-only until you choose a plan. Nothing is deleted, everything stays viewable and downloadable, and subscribing makes it writable again.
